Earlier this week, I made salad with watermelon in it and it was delicious! I tried a recipe from Glamour magazine that melded the sweetness of watermelons with the freshness of cucumbers and loved how it turned out - as did my mother! The salad is so simple to toss together and I've made it twice in the past few days... there was plenty of watermelon left over and I couldn't say no.
Ingredients: ½ cup uncooked quinoa, 1 cup diced cucumber, 1 cup crumbled feta cheese, 2 cups diced watermelon, ½ cup cilantro leaves, ½ mashed avocado, 1 lime juiced, ¼ cup olive oil, salt, pepper.
Do: Cook ½ cup of quinoa in 1 cup of water in a saucepan on medium heat for about 10 minutes or as directed on package. Combine cooled quinoa with diced cucumber, diced watermelon, ½ cup feta cheese. In a blender, blend together cilantro, avocado, lime juice, olive oil and some salt to taste for dressing. Toss salad with dressing. Season salad with salt and pepper and top with extra cheese and some fresh cilantro. Dive in and enjoy!
