Kitchen: Quinoa with Shrimp


Eating healthy and working out regularly is one of those goals that I'm always striving to maintain. One of the magazine I "read" regularly is Self and I love some of the tips and recipes it has. Last month, quinoa was the star of several dishes and so I tried quinoa for the first time and loved it. After a trip to Whole Foods, I chopped up some veggies and cooked up this yummy quinoa and shrimp dish. And it was so easy!
Ingredients: ½ cup quinoa, 10 ounces shrimp, ½ cup chopped carrots, ½ cup chopped red bell pepper, ½ cup chopped onions, 2 cloves garlic, olive oil, 3 tablespoons peanuts, ½ tsp ground ginger, 2 tablespoons soy sauce, 1 teaspoon of white vinegar, 4 green onions diced, salt and pepper.
Do: Cook quinoa in a medium pot as directed on the bag/box. Add 1 tablespoon of olive oil to a large skillet and cook shrimp till pink and browned. Remove shrimp and add another tablespoon of oil to pan. Add chopped carrots, peppers, onion and garlic and cook till softened. Add shrimp and quinoa with soy sauce, ginger, vinegar and salt and pepper and combine. Turn off heat and fold in peanuts and green onions. Devour.
