I love cooking up lunches to share with my friends and roommates. For lunch on Sunday, I thawed some chicken and took out a few veggies to make a flatbread with chicken and roasted bell peppers. I used this recipe to make the bread and prepare the toppings for the yummy and savory flatbread. In addition to the bell peppers and garlic that were roasted, I sautéed a handful of diced onions in the chicken drippings and added it on top. Coming out of the oven, the flatbread looked beautiful and tasted even better. Bonus: I have half of the dough left to make a second flatbread today.
